Berry-spinach-coconut ice cream


Green smoothies zijn hip. En supergezond. En, in de meeste gevallen, heul erg lekker! Nu had ik al eerder ontdekt dat, wanneer een smoothie niet zo in de smaak valt bij de kuikens, een ijsje er toch vaak wel in gaat. Zo maakten we eerder al boerenkoolijsjes, en ze waren er dol op! Maar ik... ik houd niet zo van ijslolly's. Ik wil schepijs. Romig, halfzacht schepijs. Een beetje zoet en lekker fruitig. Daar houd ik van. Dus hup, aan de slag!

Green smoothies are hot. And super duper healthy. And, in most cases, no less than delicious! I had discovered earlier that if a smoothie doesn't totally appeal to my offspring, it has a much better chance if transformed into a popsicle. We've made kale popsicles before, and they loved them! Me on the other hand... I'm not particularly fond of popsicles. I like ice cream. Creamy. Soft. Ice cream. A little bit sweet, nice and fruity. Yep, that's what I like. Well, get to work!


1 kop bevroren blauwe bessen
1/2 kop bevroren frambozen
4 deelblokjes diepvriesspinazie
100 ml kokosmelk
1-2 eetlepels kokosolie
2 druppels stevia

1 cup frozen blueberries
1/2 cup frozen raspberries
4 cubes of frozen spinach
about 1/2 cup of coconut milk
1-2 tablespoons of coconut oil
2 drops of liquid stevia


Kokosolie au bain marie laten smelten. De rest even roeren met één of ander apparaatje (mijn cheap ass blender heeft het begeven en dus pruts ik met mijn staafmixer. Dat lukt uiteindelijk ook... maar als je de mogelijkheid hebt, kan ik je een goede blender van harte aanraden!). Let op of de spinazie goed geblend is en er geen brokjes meer in zitten. Doe als laatste de kokosolie erdoor. Zet het mengsel in de vriezer en roer het elk halfuur  even door.
 Als 't klaar is: aftoppen met kokosrasp en een blaadje verse munt. Strooi wat chiazaadjes voor een beetje crunch! Of... rauwe cacaonibs, altijd goed :D.

Melt coconut oil in a bain-marie. Mix all the other ingredients with some device (my cheap ass blender broke and so I used my stick hand blender with the chopper attachment. Works too, eventually - but if you have the option, I can definitely reccomend a good blender!) Check if all the spinach cubes are totally blended and no pieces are left in your ice cream. Add coconut oil and mix. Put the mixture in the freezer and stir every 30 minutes or so.
When finished: top with shredded coconut and a twig of fresh mint. Sprinkle some chia seeds for added crunch! Or... raw cacao nibs, always work :D
