Chia chocolate mousse


Ik hield nooit zo van chocolade. Marsen, snickers, brokken, repen... aan mij niet zo besteed. Maar zoals ik hier al zei... er gaat niets boven je eigen chocolade <3! Sinds ik alles zelf maak heb ik toch een lichtelijke verslaving ontwikkeld. Nu maar eens een mousse, variatie is tenslotte belangrijk.

chiazaad
rijstemelk of water
rauwe cacaopoeder
beetje rauwe cacaoboter en/of kokosolie, au bain marie gesmolten
geraspte kokos
stevia
evt ander zoetmiddel naar keuze

 In de blender, aftoppen met een beetje kokosrasp en rauwe cacaonibs.

De verhoudingen? Die zijn heel persoonlijk. En dat is eigenlijk vooral een goed excuus voor mijn chaotische brein om ongehinderd volledig in het creatieve proces op te gaan ;).  Maar smaken verschillen tenslotte, dus proeven is het sleutelwoord! De chiazaadjes zorgen voor de binding, daarmee bepaal je dus de stevigheid van je mousse. De textuur is iets anders dan anders door de crunch van de chiazaadjes. Met de kokosrasp en cacaonibs erbij is de mousse toch al niet heel glad en dat maakt hem juist zo heerlijk apart.

I never really liked chocolate. Mars, snickers, chunks, bars... it's just not my cup of chocolate. But as I said here: nothing beats home made chocolate <3! Since I make my own stuff I do seem to have developed a mild addiction. I guess. So, a mousse for a change! Just because diversity is important.

chia seeds
rice milk or water
raw cacao
a little raw cacao butter or coconut oil, melted in a bain marie
grated coconut
stevia
coconut palm sugar or xylitol

Put in blender, top with some grated coconut and raw cacao nibs.

Volumes? Well, those are very personal. Or maybe that's just an excuse for my chaotic brain to freely get absorbed in the creative process ;). But hey, taste IS personal. So taste is the key word here! The chia seeds bind it all together, so add more if it's too liquid and wait a while for it to glue it up. The texture is somewhat different from the chocolate mousse you're used to, because the chia seeds add a little crunch. With the grated coconut and nibs, this mousse isn't too smooth in the first place and that is just what makes it so delicously different.

Super yammy fries

De bataat of zoete aardappel bevat hoge concentraties vitaminen en mineralen en wordt vaak als superfood bestempeld. Het bevat bijna 2x zoveel vezels als gewone aardappel, heeft een lage glycemische index en reguleert de bloedsuikerspiegel.

Yams or sweet potatoes contain high levels of vitamins and minerals and are often referred to as a superfood. They contain almost twice as much fiber as regular potatoes, they are low glycemic and help regulate blood sugar levels.























800 gram bataten (zoete aardappel)
3 eetlepels olijfolie of vloeibare kokosolie*
1 flinke theelepel kaneel
1 flinke theelepel paprikapoeder (mild)
snufje zeezout

Verwarm de oven voor op 190 graden. Schil de bataten en snijd ze in patatjes, net zo dik of dun als je lekker lijkt. Meng in een grote kom de olie met de kruiden. Doe de patatjes in de kom en schep de boel met je handen om, totdat alle patatjes met kruiden bedekt zijn. Leg de patatjes op een bakplaat. Ik ben er inmiddels achter dat het niet zo netjes hoeft als op de foto... over elkaar heen werkt echt prima! Je hoeft ze dan ook niet om te draaien halverwege, maar wel een keer of twee even door elkaar husselen met een spatel. Bak de patatjes, afhankelijk van de dikte, 15-20 minuutjes in de oven. 

Je ziet, het woord bataat lijkt al op patat. Ze zijn ervoor gemaakt! Deze zoete aardappelpatatjes zijn heerlijk om zo op te peuzelen, hoewel ik persoonijk ook in dit geval een flinke klodder mayo niet schuw!

*gebruik bij het bakken altijd kokosolie of olijfolie. Die zijn stabieler bij hogere temperaturen dan andere veelgebruikte oliën waaruit bij verhitting kankerverwekkende stoffen ontstaan.



1 lbs 12 oz sweet potatoes (yams)
3 tablespoons of olive oil or liquid coconut oil*
1 heaped teaspoon of cinnamon
1 heaped teaspoon of mild paprika
some sea salt

Preheat oven to 374 degrees. Peel sweet potatoes and cut them as thick or as thin as you like. In a big bowl, mix spices and oil. Add sweet potatoe fries and stir with your hands untill they are all covered with the spice mix. Put them on a baking sheet. I discovered it actually doesn't need to be all straight and neat like the picture... they will turn out just as fine when partly on top of eachother. Plus, it's easier to just stir or shake them a few times than to have to turn them all over individually. Depending on how thick they are, bake for 15-20 minutes. (Yay, finally a number I don't have to look up a conversion chart for ;)))

These sweet potatoe fries are just plain delicious. But as a real Dutchy, I'd definitely reccomend you try them with a small heap of mayonnaise!

*use olive or coconut oil when baking. These are more stable at high temperatures than other common oils that produce carcinogens when heated.

Sunny soup























Deze zonnige soep is een boost voor het immuunsysteem, helpt de spijsvertering en zit bomvol anti-oxidanten. Perfect voor een lichte maaltijd op een zomerse dag. Bijkomend voordeel: het caroteen uit de wortels helpt de huid te beschermen tegen de zon!

500 gram wortelen
1 prei
1 liter bouillon* 
3 el kokoscrème (santen)
 4 cm verse geelwortel (koenjit, kurkuma)
2 tenen knoflook
zwarte peper*

Snijd de wortelen en de prei in plakjes en kook ze in de bouillon in ongeveer 20 minuten gaar. Voeg eventueel nog wat water toe. Zet het vuur uit en doe de kokoscrème erbij. Rasp de geelwortel en pers de knoflook en voeg die ook toe. Pureer alles met de staafmixer en breng op smaak met peper en zout.

*gebruik geen bouillonblokjes: hierin zitten toxische smaakversterkers die onder andere schade toebrengen aan de hersenen, vooral bij kinderen in ontwikkeling. Lees hier meer. Nog nooit bouillon zelf gemaakt? Vraag je slager om hulp (of je moeder)! Veel (bio)slagers verkopen ook een ingevroren, zelfgetrokken bouillon zonder toevoegingen.

*zwarte peper helpt om de heilzame stoffen uit de geelwortel goed op te nemen. Geelwortel is naast een boost voor het immuunsysteem en een verteringsversterker ook een sterke ontstekingsremmer en word van oudsher medicinaal toegepast.
 
 
This sunny soup boosts your immune system, enhances digestion and provides you with a load of anti-oxidants. It's great for a light meal on a summer's day. Additional benefit: the carotens from the carrots help protect your skin from sun damage!

1 lb carrots
1 leek
1 quart of stock or bouillon* 
3 tablespoons of creamed coconut
about 1.5 inch of fresh turmeric (curcumin)
2 cloves of garlic
black pepper*

Cut carrots and leek in small pieces and boil in stock for about 20 minutes, untill soft. Add water if needed. Turn off the heat and add creamed coconut. Add grated turmeric and pressed garlic. Puree with a stick hand blender and add pepper and salt to taste!

*Do not use ready made stock from the store or bouillon cubes: these contain dangerous chemicals that damage the brain, particularly in developing children. To read more, google MSG. Never made stock or broth before? Ask your butcher for help - or your mom! I know, at least in Holland, most (organic) butchers sell their own home made frozen stock.

*Black pepper aids in the absorption of curcumin, an active ingredient in turmeric. It boosts immune system and digestion, has very strong anti-inflammatory properties and has been used as a medicinal herb in many traditions.

Nutty chocolate chunks























Chocola. Precies naar je eigen zin. Nooit meer te weinig noten, te bitter, te zoet, te ongezond of anderszins nét-niet-helemaal-chocola... Zelf chocola maken is een van de meest geweldige ontdekkingen die ik ooit deed! Hier het recept voor de lekkerste notenchocola.

  • In een kopje wat cacaoboter en/of wat kokosolie laten smelten (ik deed 50/50)  
  • in een ander kopje eenzelfde laagje (rauwe) cacaopoeder 
  • goed mengen
  • naar smaak wat lepels kokoscreme (santen) erdoorheen mengen 
  • naar smaak zoeten met stevia, kokosbloesemsuiker of xylitol
  • geraspte kokos, hazelnoten en pompoenpitten erdoor roeren
  • uitgieten in een bakje of op een vlakke plaat, kies de grootte afhankelijk van hoe dik je je chocola wilt hebben
  • in de koelkast zetten (ik zet de mijne in de vriezer: ik heb altijd haast als het chocola aangaat...)
 En dan: genieten <3

Chocolate. Just the way you want it. No more 'too bitter', 'too sweet', 'not enough nuts', 'too unhealthy' or otherwise not-entirely-perfect chocolate. Making my own chocolate is one of the best discoveries I have ever made! Here's a recipe for some irresistable nutty chocolate chunks.  
 
  • melt some cacao butter and/or coconut oil in a tea or coffee cup (I use 50/50)
  •  fill another cup with just about the same amount of (raw) cacao powder
  • mix together
  • stir in a few spoons of coconut cream
  • sweeten to taste with stevia, coconut palm sugar or xylitol
  • stir in grated coconut, hazelnuts and pumkin seeds
  • pour in a dish, plastic container or whatever seems the right size depending on how thick you want your chunks to be
  • put in fridge (I put mine in the freezer: when it comes to chocolate, I'm just always in a hurry...)
